The restaurant is in the renovated cellar on the ground floor of the Hotel.

Today it is still possible to admire the old elliptical arch which divides the dining area from the kitchen and the stone walls. The floor is covered by large slabs of slate typical of the region, taken from the quarries of Fontanabuona, in the nearby towns of Lavagna and Chiavari.

The dining area opens towards a terrace overlooking the village of Chiesanuova, the valley of Levanto and the Mediterranean sea.

It will be a pleasure to relax here or in the nearby garden admiring the view and the sunsets, while enjoying a glass of good wine.

Chef and Sommelier Luca Palmero Scatena, together with the historic soul of the kitchen, Fulvia Busco, take particular care in ensuring that our guests will have an authentic yet unique experience of our local cuisine by reinterpreting local dishes and readapting flavours and techniques from ancient recipes. Even when Luca gives free rein to his creativity, he starts from a sound traditional base.

Luca Palmero Scatena and Fulvia Busco pay particular attention to the quality of the basic ingredients: dairy products from the “organic valley” of the Val di Vara, fresh fish selected for us by Mariella and Umberto, olive oil from the farmer’s cooperative of the Levanto Valley, honey lovingly produced by Karen in the hills above Levanto , a fine selection of products from “Eataly” or the soft drinks from Lurisia made with ingredients certified by Slow Food.

Not to mention the wine selection... (Actually we will talk about it later in the chapter on the wine cellar).

The use of high quality ingredients allows Luca to employ a “simple” preparation technique, which will not overwhelm the core ingredients, but will in fact enhance their characteristics.

Dinner is served every evening except Sunday from 7:30 pm to 9.30 pm.

Guests will be able to enjoy two different menus:

The “Today at the Market”, a three course tasting menu plus a dessert, offered at the price of € 55,00/65.00 (depending on the basic ingredients used - wine and beverages excluded)

The “La Sosta Classic” menu, with a selection of salami and cheese, a first course and a dessert for € 35.00, excluding wine and beverages.

Please let us know about any dietary requirements and we will do our best to satisfy your needs.

THE WINE CELLAR

When you sip and savour the local wine, you cannot help but think of the effort of the men and women who over the centuries have made it a reality, of the beauty of the landscape surrounding the vineyards, and of the struggle to protect this precious and fragile ecosystem.

It has been said that the Cinque Terre winemaker “is a sort of modern and everyday hero, who, by continuously restoring the dry-stone walls, draws a living from the vineyard giving life to the territory”.

We have therefore created a wine list which we believe brings together our area’s - Levanto, Cinque Terre and the Val di Vara - best producers.

From the Cinque Terre you will find the wines of Walter De Battè, Bartolo “Cheo” Lercari and his wife Lise, Luciano Cappellini, Rosy and Sebastian of the Azienda Agricola Vetua.

From the Levanto valley we prefer the “passiti” - sweet dessert wines - from both white and red grapes, which compete with honour with the Cinque Terre’s more famous “sciacchetrà”.

From the Val di Vara come the wines of the Azienda Prima Terra, again produced by Walter De Battè, and those of Ivano Denevi and Gianluigi Careddu.

The whole wine list is offered both by the bottle and by the glass.  Luca’s expertise as both Chef and Sommelier allows him to select and suggest the best wines for the menu of the day through which one can fully appreciate the most authentic flavours of this tiny part of the world.
